Thai Food


Thai cuisine refers to typical foods, beverages, and cooking styles common to the country of Thailand. Thai Cuisine is known for being hot and spicy and its balance of five fundamental flavors in each dish or the overall meal - hot (spicy), sour, sweet, salty and bitter (optional). Although popularly considered as a single cuisine, Thai food would be more accurately described as four regional cuisines corresponding to the four main regions of the country: Northern, Northeastern (or Isan), Central and Southern, each cuisine sharing similar foods or derived from those of neighboring countries. Southern curries, for example, tend to contain coconut milk and fresh turmeric, while northeastern dishes often include lime juice.

Thai food is known for its enthusiastic use of fresh (rather than dried) herbs and spices as well as fish sauce. Thai food is popular in many Western countries especially in Australia, New Zealand, some countries in Europe such as the United Kingdom, as well as the United States, and Canada.

The ingredient
The ingredient found in almost all Thai dishes and every region of the country is nam pla (Thai น้ำปลา), a very aromatic and strong tasting fish sauce. Shrimp paste, a combination of ground shrimp and salt, is also extensively used.

Thai dishes in the Central and Southern regions use a wide variety of leaves rarely found in the West, such as kaffir lime leaves (bai makrut, Thai ใบมะกรูด). The characteristic flavour of kaffir lime leaves' appears in nearly every Thai soup (e.g., the hot and sour Tom yam) or curry from those areas. It is frequently combined with garlic, galangal, lemon grass, turmeric and/or fingerroot (krachai), blended together with liberal amounts of various chillies to make curry paste. Fresh Thai basil is also used to add fragrance in certain dishes such as Green curry. Other typical ingredients include the small green Thai eggplants, tamarind, palm and coconut sugars, lime juice, and coconut milk. A variety of chilies and spicy elements are found in most Thai dishes.

Other ingredients also include pahk chee (cilantro or coriander), rahk pahk chee (cilantro/coriander roots), curry pastes, pong kah-ree (curry powder), si-yu dahm (dark soy sauce), gung haeng (dried shrimp), pong pa-loh (five-spice powder), tua fahk yao (long beans or yard-long beans), nahmahn hoi (oyster sauce), prik Thai (Thai pepper), rice and tapioca flour, and nahm prik pao (roasted chilli paste).

Although broccoli is often used in Asian restaurants in the west in pad thai and rad na, it was never actually used in any traditional Thai food in Thailand and is still rarely seen in Thailand. Usually, gailan is used

Diving


Diving in Thailand has become very popular as the Kingdom is home to some of the finest and most beautiful beaches and islands in the world, surrounded by water and coral. And that is the main reason why the number of divers coming to Thailand has escalated over the past decade or so.

The sea visibility in some places of Thailand means talking about distances of up to 30 meters; the sights of underwater mountains, coral gardens, undersea rock formations, hard and soft coral, whale sharks, silver tip sharks, manta rays and even sunken battleships.

Muay Thai


Muay Thai (Thai: มวยไทย, lit. Thai Boxing) is a form of hard martial art practiced in several Southeast Asian countries including Thailand. The art is similar to others in Southeast Asia such as: Pradal Serey in Cambodia, Lethwei in Myanmar, Tomoi in Malaysia, and Muay Lao in Laos. Muay Thai has a long history in Thailand and is the country's national sport. Traditional Muay Thai practiced today varies significantly from the ancient art Muay Boran and uses kicks and punches in a ring with gloves similar to those used in Western boxing.

Muay Thai is referred to as "The Art of the Eight Limbs", as the hands, shins, elbows, and knees are all used extensively in this art. A practitioner of Muay Thai ("nak muay") thus has the ability to execute strikes using eight "points of contact," as opposed to "two points" (fists) in Western boxing and "four points" (fists, feet) used in the primarily sport-oriented forms of martial arts.

Thai silk


Thai silk is produced from the cocoons of thai silkworms. Thai weavers, mainly from the Khorat Plateau in the northeast region of Thailand, raise the caterpillars on a steady diet of mulberry leaves. Khorat is the center of the silk industry in Thailand and a steady supplier of rose Thai silk for many generations.

Today, Thai silk is considered to be one of the finest fabrics in the world, a product of a unique manufacturing process and bearing unique patterns and colors.

After silk originated in ancient China where the practice of weaving silk began around 2,640 BCE, Chinese merchants spread the use of silk to different regions throughout Asia through trade. Some historical accounts indicate that archaeologists found the first fibers of Thai silk to be over 3,000 years old in the ruins of Baan Chiang, Thailand, the site is considered by many to be Southeast Asia's oldest civilization.

Since traditional Thai silk is hand woven, each silk fabric is unique and cannot be duplicated through commercial means. In contrast, artificial silk is machine woven, which means that every part of the fabric is identical and has the same color.

In addition, Thai silk has a unique luster, with a sheen that has two unique blends: one color for the warp and another for the weft. Color changes as you hold the Thai silk fabric at varying angles against light.


Moreover, Thai silk smells like hair when burned, a testament to the natural fiber that comes from the silk worm, which is similar to the fiber of human hair and fingernails. If you move the flame, Thai silk immediately stops burning. On the other hand, artificial silk smells like plastic when burned.

In terms of price, Thai silk is usually 10 times more expensive than artificial silk.

Phi Phi


The Phi Phi Islands (Thai: หมู่เกาะพีพี) are located in Thailand, between the large island of Phuket and the western Andaman Sea coast of the mainland. Phi Phi Don, the larger and principal of the two Phi Phi islands. Both Phi Phi Don, and Phi Phi Leh, the smaller, are administratively part of Krabi province, most of which is on the mainland.

Ko Phi Phi Don ("ko" (Thai: เกาะ) meaning "island" in the Thai language) is the largest island of the group, and is the only island with permanent inhabitants, although the beaches of the second largest island, Ko Phi Phi Lee (or "Ko Phi Phi Leh"), are visited by many people as well. There are no accommodation facilities on this island, but it is just a short boat ride from Ko Phi Phi Don. The rest of the islands in the group, including Bida Nok, Bida Noi, and Bamboo Island, are not much more than large limestone rocks jutting out of the sea.

Phi Phi Don was initially populated by Muslim fishermen during the late 1940s, and later became a coconut plantation. The Thai population of Phi Phi Don remains more than 80% Muslim.But the actual population if counting laborers, especially from the north-east, from the mainland is much more Buddhist these days.

Ko Phi Phi Leh was the backdrop for the 2000 movie The Beach. Phi Phi Leh also houses the 'Viking Cave', from which there is a thriving bird's nest soup industry. There was criticism during filming of 'The Beach' that the permission granted to the film company to physically alter the environment inside Phi Phi Islands National Park was illegal. The controversy cooled down however, when it was discovered that the producers had done such a decent job of restoring the place that it finally looked better than it had done before.

Following the release of The Beach, tourism on Phi Phi Don increased dramatically, and with it the population of the island. Many buildings were constructed without planning permission.

Ko Phi Phi was devastated by the Indian Ocean tsunami of December 2004, when nearly all of the island's infrastructure was wiped out. Redevelopment has, however, been swift, and services like electricity, water, Internet access and ATMs are up and running again, but waste handling has been slower to come back online.

Golf


Golf arrived in Thailand during the reign of King Rama V one hundred years ago. It was first played by nobles and other elitists of high society but over the past decade or so, the popularity of golf in Thailand has escalated, played both by local Thais and visiting foreign tourists and expatriates.

There are an average of 400,000 foreign golfers coming to the Kingdom annually, golf in Thailand has turned into a huge local industry with new courses constantly being developed. Golf alone is annually bringing an income of 8 billion baht into the local economy. The country has been given the nickname 'The Golf Capital of Asia'

Thailand has over two hundred courses which are rated as of the highest world standard. Many of them have been designed and created by some of the classic names in the golfing world such as Nick Faldo, Arnold Palmer, Jack Nicklaus, Seve Ballesteros, Gary Player, and Greg Norman

Samui


Ko Samui island of Surat Thani Province (or Koh Samui, Thai: เกาะสมุย) is an island off the east coast of the Kra Isthmus in Thailand, close to the mainland Surat Thani town. It is Thailand's third largest island, with an area of 228.7 km² and a population of 47,874 (2006). It is rich with natural resources, white sandy beaches, coral reefs and coconut trees.

Samui is visited mostly by holidaymakers wanting to "get away from it all", and its main appeal is its funky rural beach communities with white beaches and clear & warm seas, and it has a few exceptional ones to choose from. Ko Samui is hardly "away from it all" anymore, but rather a cool and bustling international island resort. Choeng Mon beach Lamai beach High streetChaweng Beach covers a large portion of the island's northeast coast, and is easily the most crowded and tourist saturated region on the island. The beach itself, while beautiful and clean often suffers from seasonal overcrowding as ever increasing numbers of visitors discover the island. Several hotels, ranging from budget resorts to luxury villas line up the shore. Restaurants are set right along the beachside, making Chaweng Beach seem to glow from within the sands.

Set back about 100 meters from the sand the one way beach road in Chaweng has developed into a bustling international tourist town packed with every kind of resort, restaurant, and bar (ranging from busy traditional family-run open air sea food and noodle Thai at Ninja, through exclusive Thai-Californian fusion food at Jeff Lord's Betelnut to Irish Pubs and American Fast Food places McDonald's and Starbucks), Fine art, tailors, and souvenir shops, markets and wild, rambunctious, or chilled out nightclubs.

It gets ultra busy on the beach road at night with a crazy and colorful mix of pedestrians, motorcycles, and 'Song Taos', or small truck-taxis carrying people up and down the village. Chaweng is a jumping place with people exploring the shops (which also stay open late) and dancing the night away. There is plenty of nightlife, and Soi Green Mango is ground zero for a raging club and bar scene that only begins to simmer down after two AM.

In the summer months the waters in Chaweng can occasionally have some wind swell & surf, so be prepared for strong rip tides or side shore currents. The waters are shallow, but inexperienced swimmers should either stay close to shore or swim with other people.

Also on the East coast is Lamai, just south of Chaweng and smaller, but Lamai's beaches are clean and occasionally less crowded than Chaweng. Lamai was the original destination for travelers to Samui, and compared to Chaweng the town is a bit more tawdry and low budget, but it has its own distinct charms.
Greater Lamai is actually a large and beautiful valley, and as one travels inland away from the beach village the landscape is striking. Lamai has some pretty outrageous 'social' bars in the middle of town, and the once a week all girl Muay Thai boxing matches always seem to draw an eclectic crowd. Lamai has a lovely old Wat(temple), and is also the location of two of the most endearing original spas on the island, one on the beach, a hipster paradise called 'The Spa', and the other called 'Tamarind Springs', which has long been the class act on the island.

In the center of the North coast of the island, Maenam offers spectacular views of Ko Phangan to the North, and the Ang Thong National Marine Park to the East. The waters are calm and clean, being protected from the North Easterly currents by Ko Phangan. Because the sans are golden rather than white Meanam is usually much less crowded than Lamai or Chaweng, and Maenam's restaurants and bars still retain much of the local Thai flavor as well as being more reasonably priced, or even inexpensive. Overall Maenam is quieter, more relaxed, with local Thai community still pretty much intact. Meanam is also home to the Santiburi Resort, still considered by many to be the premier hotel on the island. The major golf course on the island is also in Maenam.

Pattaya


Pattaya (Thai: พัทยา) is a city in Thailand, located on the east coast of the Gulf of Thailand about 165 km southeast of Bangkok located within but not part of Amphoe Bang Lamung in the province of Chon Buri.

Meaning the 'south-west monsoon wind" and correctly pronounced "Putt-tuh-YAH" not "Patt-EYE-uh", it ranks as one of the most successful beach resorts in the world, with some 5.4 million visitors arriving in 2005. Increasing numbers of tourists come from the former Soviet Union and East Asia.

The city of Pattaya is a self governing special municipal area which covers the whole tambon Nong Prue and Na Kluea and parts of Huai Yai and Nong Pla Lai. It is located in the heavily industrial Eastern Seaboard zone, along with Si Racha, Laem Chabang, and Chon Buri. However, it remains mostly a tourist city, with very light industry.

Pattaya is second only to Bangkok in high rise buildings, as many condos for foreign residents are built, and has a modest skyline. The city's economy benefits from its relative proximity to Bangkok.

Pattaya is also the center of the Pattaya-Chonburi Metropolitan Area, the conurbation in Chonburi Province.

Khoa Yai National Park


Khao Yai National Park (Thai เขาใหญ่) is a national park in Thailand. It lies largely in Nakhon Ratchasima Province (Khorat), but also includes parts of Saraburi, Prachinburi and Nakhon Nayok provinces. It was the country's first national park, established on September 18, 1962. A major role in its establishment was done by Boonsong Lekakul, one of the 20th century's most famous conservationists in Thailand

The park is the second largest in Thailand. It covers an area of 2,168 square kilometers, including evergreen forests and grasslands. Its altitude mostly ranges from 400 to 1000 m above sea level. There are 3,000 species of plants, 320 species of birds and 67 species of mammals, including Asiatic black bears, Asian elephants, gaur, tigers, gibbons, Indian sambar deer, Indian muntjac, dholes, and wild pigs. Its waterfalls include the 80 metre Heo Narok, and Haeo Suwat made famous from the film The Beach. Namtok Sarika is popular with the Thais.

Recent wildlife studies show that animal ranges, particularly the few resident tigers, are impacted by human activity near the center of the park. This study has not impacted the government's call for private lodging concessions within the park itself.

The park is often visited by travellers from Isan, Bangkok and beyond, for whom there are over 50km of hiking trails.

In 1984 the park was made an ASEAN Heritage Park, and on July 14 2005 the park together with other parks in the Dong Phaya Yen mountains was inscribed as a UNESCO World Heritage Site under the name Dong Phaya Yen–Khao Yai Forest Complex. Lands adjacent to the national park are increasingly developed into luxury hotels and golf courses for weekending visitors from Bangkok. Such development limits wildlife corridors and permanently reduces future conservation and land acquisition ability.


The fee is 400 baht for foreigners (200 for children), and 40 for Thais. Food is available from private concessions within the park. As well, night-time "wildlife spotlighting" is available via pick-up trucks in the early evening. Animals sighted usually are limited to deer and civet cats, and only rarely include elephants.
